Despite its classification as a grain crop, corn is considered a vegetable when harvested young. Corn stalks produce a cob of seeds, also known as kernels.
Up to 400 kernels can be found in a single ear of corn. At its peak of ripeness, freshly harvested corn has a sweet flavor with hints of almond and sugar.
In mature corn, the milky texture of the kernels is replaced with a starchy, doughy texture. Mature corn kernels which are hard are considered as grain crop instead of vegetable.
