Enoki Mushroom

Enoki mushrooms can be cultivated in controlled environments or can also be harvested from the wild. 

To encourage the growth of long, thin, and white stems, enoki mushrooms are cultivated in a dark, carbon dioxide-rich environment. 

The cultivated enoki mushroom grows on tight, long stems topped with peach-colored, convex caps that are very small in size. 

The white, delicate, and tender caps are paired with thin, elongated stems. The stems are up to 12 centimeters in length and have matching white caps. In addition to being crisp and firm, cultivated enoki mushrooms also have a mild, fruity taste.

Compared to cultivated Enoki mushrooms, wild Enoki mushrooms have larger caps and shorter stems. A wild Enoki mushroom ranges in color from orange to brown, is slightly sticky, rubbery, velvety in consistency, and has an earthy flavor.

Wild Enoki mushrooms grow naturally in clusters on tree trunks, and those trees tend to be Chinese hackberry trees, persimmons, ash trees, and mulberry trees. 

Among the nutrients found in Enoki mushrooms are dietary fiber, niacin, calcium, potassium, selenium, copper, phosphorus, and iron. As well as being anti-inflammatory, they are also great for boosting the immune system.
