Fennel is a spice and medicinal plant native to the Mediterranean region and southern Europe. This herb grows three to ten feet tall and is an upright perennial herb. There are thick, ribbed, hollow stems on the plant, which grow from its rooted bulb (called the crown).
These stems sprout green branches and feathery foliage. Upon maturation, the plant produces a cluster of bright yellow flowers in the shape of an umbrella.
Its entire structure is edible, including the crown and flowers.
Fennel has a sweet flavor with licorice and citrus notes. Often, fennel’s smaller bulbs are harvested for their fragrant and succulent qualities.
