Leaflets of fenugreek are small and grow on slender, green stems that reach a height of 25 to 50 centimeters. The oblong to round leaflets are grouped in threes and are thin and supple.
A fresh fenugreek leaf has a light, sweet aroma as well as a mild, grassy, slightly bitter taste with hints of celery, fennel, and maple syrup.
When the plant matures, it produces sword-shaped, pea-like pods that are filled with 10-20 flattened, yellow-brown seeds that smell and taste like the leaves do.
