The leaves of sweet potatoes are cordate, or heart-shaped, medium to large in size, and pointy on the tips. Depending on the varieties, the leaves are arranged alternately or may also have multiple lobes.
The sweet potato leaf can range in color from dark to yellow-green or purple, and the underside tends to be lighter than the surface.
The leaves and stems in the top ten centimeters are the most tender and are typically consumed. Raw sweet potato leaves taste mildly bitter, but when cooked they take on a mildly sweet flavor comparable to that of spinach or water spinach.
Sweet potato leaves are a rich source of niacin, thiamine, riboflavin, fiber, beta-carotene, and vitamins A, B, C, D, E, and K. Additionally they also contain minerals like sodium, potassium, calcium, zinc, magnesium, phosphorus, and manganese.
