Collard greens are member of Brassicaceae family similar to cabbage, broccoli and kale. A collard leaf is wider and paddle-shaped, with deep green to grey hues with white veins and ribs that contrast with the green.
Its flavor is cruciferous and almost alkaline. Collard greens are sweetest and tastiest in late winter and early spring. Raw collard greens are slight bitter in taste ( due to presence of phenylthiocarbamide).
