Botanically green cabbage belongs to mustard family. Numerous pale green leaves are thick and broad, with prominent veins and a slightly waxy surface. The leaves overlap each other to forma dense sphere or oblate ball.

Green cabbage is known for its sweet and grassy taste with a mustardy finish. Raw green cabbage is crunchy and firm in texture. Cooked green cabbage looses its crunchy texture and becomes soft.
