Green Olives

An olive green in color has not yet matured and is still an immature fruit.

Several varieties of olives are grown, some harvested while still young and immature and others left to ripen on the trees. Black olive is the ripe version of olive.

A fresh green olive is picked before it begins to change color from green to yellowish-green or just before it becomes red-ripe. Large Sevillano, French Picholine and Barouni are olive varieties which are harvested in their green color stage.

The flesh of fresh green olives has a grassy and bitter taste (because of presence of compound oleuropein).

A fresh green olive has an elongated shape and is nearly round. A seed or kernel about 2 centimeters long lies in the center. Depending on the species, they can measure from 2 to 4 centimeters in length.
