The Green Jalapeno chili pepper gets its name from the city where it originated in Mexico, Xalapa (also spelled Jalapa). Green Jalapeno chili peppers range from 2,500 to 8,000 Scoville units on the Scoville scale and are popular in fusion cuisines for their grassy flavor and mild heat.

Green Jalapeno peppers are curved to straight pods, which are between 5 and 15 centimeters long and 2 and 5 centimeters wide, and taper to a rounded point on the non-stem end.

When mature, Jalapeno skin becomes smooth, taut, and glossy, turning from dark green to red.

Crisp, green, thick and aqueous flesh resides beneath the surface of the skin. The flesh encases a cavity filled with cream-colored, round, flat seeds.

Green Jalapeno peppers have a vegetal, grassy, and mild to moderately spicy taste.

Besides vitamin C, green jalapeno peppers contain copper, magnesium, vitamins A, E, and K, folate, manganese, fiber, potassium, and iron. Moreover, peppers contain capsaicin, the chemical compound that causes the brain to perceive heat or spice. The anti-inflammatory effects of capsaicin and its ability to aid digestion have all been demonstrated.

Among the most common fresh varieties of chili peppers sold in Mexican and American markets are Green Jalapeno peppers, which are favored for use in salsas, hot sauces, and are pickled for use as condiments.
