Oyster Mushroom

Pleurotus ostreatus, Pleurotus pulmonarius, and Pleurotus populinus, all members of the Pleurotaceae family, are referred to as oyster mushrooms. Its name comes from the fact that oyster mushrooms resemble fresh-shucked oysters in appearance and taste.

In temperate forests across the world, oyster mushrooms grow in stacked layers on decaying wood, especially beech and aspen trees. 

With shiitake mushrooms and button mushrooms, oyster mushrooms are one of the most widely cultivated mushrooms in the world and have a unique flavor that melds well with many different cuisines.  

Its caps range in diameter from 5 to 25 centimeters and its stem is short or absent. Oyster mushrooms are medium to large in size. The broad, fan-like caps vary in color from dark grey to brown, tan to pink, or yellow and have curled edges that turn into wavy and lobbed as they mature. White grills can be seen under the cap.

Oyster mushroom flesh is firm and meaty. A slight chewy texture and softness characterize oyster mushrooms, which emit a bittersweet aroma similar to the herb anise. Upon cooking, they develop a mild, nutty flavor that is similar to seafood.   

Among oyster mushrooms’ nutrients are vitamin B6 and D, fiber, potassium, and folate.  Also, they contain ergothioneine, an antioxidant that reduces inflammation.
