White Mushroom / Button mushroom

White button mushrooms are one of the most cultivated mushroom varieties in the world (about 90% of total mushrooms cultivated in America). However, they can also be found on grasslands and fields. 

The white button mushroom is a slightly different variety closely related to the cremini mushroom and the large portobello mushroom, but mainly differs by color and age. The youngest are white button mushrooms, followed by cremini, then portobello mushrooms, which are the most mature. 

White button mushrooms are small to medium-sized and have truncated, short stems attached to a cap that is 2-7 centimeters in diameter. The caps are smooth, firm, spongy and rounded. As the white flesh becomes bruised, it will turn light pink, which will then turn brown.

These unopened caps contain many small, light brown gills hiding under a white veil, producing dark brown spores. It also has a dense, thick, smooth, and white stem which is edible. 

White button mushrooms have a mild taste and crisp texture when raw, and become earthy, chewy when cooked.   

In addition to antioxidants, white button mushrooms contain potassium, folate, amino acids, selenium, riboflavin, manganese, zinc, vitamin D, and phosphorus.
