Red cabbage is a variant of white cabbage. This coloration is due to the presence of anthocyanins in red cabbage. This rounded vegetable is wrapped in tightly wound waxy leaves, just like green cabbage.
In contrast to true red, the leaves are more violet and burgundy. Unlike Chinese cabbage, red cabbage is devoid of water weight, which makes its leaves chewier and coarser. Their flavor is more robust, cruciferous, and peppery than green cabbage, which is also due to anthocyanin pigments.
Average weight of red cabbage is approximately 1000 grams (35 ounces or 2 pounds). Average diameter of red cabbage is around 20-25 cm ( 8-10 inches).
