Amaranth Leaves

Often considered as a common weed, amaranth has more than 60 different species and is consumed as a green leafy vegetable predominantly in Asian cultures.

Known as a never-fading flower, thanks to its beautiful long-lasting blooms, the name amaranth comes from the Greek amarantos, meaning “the one that doesn’t fade“.

At the broader end of the slender red stem, red amaranth leaves form a teardrop shape. Amaranth leaf centers and veins are maroon with green edges.

Raw amaranth leaf has a slightly astringent taste. Cooked amaranth’s flavor is nutty and mild.
