Arugula leaves, also known as salad rocket or roquette or rucola, are a member of mustard or Brassicaceae plant family. Arugula leaves are commonly used as salad greens and due to high content of glucosinolates (sulphur containing compound), arugula leaves have a slight acrid flavor.

The leaves of arugula are vividly green, deeply lobed and attached to a pale creamy-green stem. For maximum mustardy flavor, harvest the leaves when they are 3 or 4 inches long when they are fully mature. Immature arugula leaves are selected when a mild flavor profile is needed.

Over-maturing of leaves will cause them to taste bitter. Arugula leaves have a peppery and slightly nutty and mustardy taste.
