Asparagus is a perennial herb and the edible spears, or young stems, of asparagus arise from an underground rhizome. The female asparagus plant produces seeds while the male does not.

A slight purple blush often appears around the stalk and throughout the conical tip, and its deep pistachio-green stalks are tender at the tip and somewhat woody and thick at the end. The flavor of asparagus is mildly grassy and sweet.

Asparagus varies on size depending on the variety: Jumbo, large or standard. Jumbo asparagus diameter ranges from 2 – 3 cm. Large asparagus diameter ranges from 1.7 – 1.9 cm. Standard asparagus diameter is around 1.6 cm.
