Bamboo Shoots

Bamboo shoots are nothing but very young bamboo clums emerging from the ground ( before a bamboo clum is 2 weeks old preferably). Bamboo shoots are harvested for their ivory-colored inner cores. 

The conical point of a bamboo shoot is made up of several fibrous layers that are tightly bound and overlap each other. Bamboo shoots have a plantain yellow skin color with brownish smear all across. They can be served in fresh or dried forms.

Cooked bamboo shoot flavor is mild and sweet. Raw bamboo shoot contains a toxin called cyanogenic glycosides, hence it shall never be consumed raw. Bamboo shoot is always boiled before consuming, to eliminate the toxin.
