The Gold Chanterelle or Cantharellus cibarius is the most well-known variety of Chanterelle mushrooms. “Chanterelle” is a generic term that describes many varieties of wild Chanterelle mushrooms.
Chanterelle mushrooms grow on forest floors near trees such as maples, poplars, birches, or oaks. Occasionally they can also be found in fields.
Due to the difficulty of replicating the symbiotic relationship between the mushroom and the host plant, chanterelle mushrooms can only be found in the wild and cannot be commercially grown. (Check out : commercially grown mushrooms)
Chanterelle mushrooms can grow up to two pounds in weight and are small to medium in size with convex caps and dense stems. Smooth and delicate, the chanterelle cap is gold-orange in color with uneven, thick, blunt edges that taper down. The gills under the cap are forked, and they have blunt edges that run down the thick, firm, and solid gold-orange stem.
The mushroom flesh is pale white and has a fruity smell with notes of apricots and peaches. During cooking, Chanterelle mushrooms become chewy with a velvety texture and possess an earthy, woody flavor enhanced by hints of pepper.
The chanterelle mushroom is regarded as a luxury culinary mushroom because of its relatively high price, unique fruity scent and chewy texture.
A high amount of ergocalciferol, or vitamin D2, is found in Chanterelle mushrooms. Also, present in chanterelle mushrooms is significant amounts of protein, vitamin A, potassium, iron, chromium, and eight essential amino acids.
