Hyacinth beans

Hyacinth beans grow up to twenty centimeters long, are flat, and slightly curved. They have a smooth, green shell that is soft to the touch. It grows on thick vines with broad leaves and thrives in tropical climates.

Depending on the variety, the fiber inside the pod contains three to six oval-shaped seeds that are typically tan, white-green, or green.

Hyacinth beans typically have strings that need to be removed, however some varieties have been developed which now grow without the string. 

Hyacinth beans are usually aromatic, sweet, and tender when cooked.

When eaten raw, some varieties of hyacinth beans are toxic due to glycosides, therefore they must be boiled thoroughly before consumption. However, some varieties like Indian broad beans contain no such toxins.
